What is Kombucha?

Kombucha is a fermented drink, slightly alcoholic, refreshing and slightly carbonated, made with black or green tea, sugar, bacteria and yeast. Kombucha has existed for thousands of years and it has numerous health benefits for gut, liver, heart, alleviates depression symptoms and helps with weight loss.

Kombucha fermentation process is produced by a thick rubbery mushroom-like cloudy mass, which is actually a symbiotic colony of bacteria and yeast also known as SCOBY.

During the fermentation process, the yeast in the SCOBY consumes the sugar in the tea and releases probiotic bacteria and producing a carbonated effect after fermentation, hence the fizzy taste.
